Botte Ventidue

Botte Ventidue was created after an idea of Letizia and our constant study of our local territory. The wine is a blend of 70 % Trebbian Verde and 30 % Ottonese, two white indigenous grapes from Olevano Romano, grown in two vineyard blocks planted in different periods and trained in a traditional way. Harvest occurs manually when the grapes are perfectly ripe. The vinification kind is meant to fully respect our tradition and our territory. Grapes are first destemmed-crushed.

Fermentation occurs naturally in the foudre and in the same one will continue to age for 11 months in contact with gross lies. Our only white wine ‘Botte Ventidue’ was named after that foudre, numbered 22 in the cellar. Before bottling, the wine is racked into concrete vat to age for one more month. Once in the bottle, Botte Ventidue ages in our cellar for further three months, then it is ready for purchase.
